Summary:This Reprint is a compendium of accepted manuscripts presented at the second West and Central African Council for Agricultural Research and Development’s International Symposium. This second edition focused on “Processing and Transformation of Agricultural Products in West and Central Africa: Achievements and Opportunities for Private Sector Engagement”. Articles in this Reprint cover three main topics: (i) Foods processing and nutrition; (ii) Postharvest management and conservation and (iii) Foods security. The objective is to contribute to advancing knowledge in food science and public health. Contributions were also made to the scientific debate on nutrition smart agriculture and nutrition sensitive agriculture, and how food processing can facilitate the implementation of these approaches.
