description The aim of this reprint is to acquaint the reader with the latest technologies and methods employed in the extraction of active ingredients in food and the analysis of bioactive ingredients. Due to the emergent interest in food nutrition and health, promoted by the aim of providing the public with a rational diet, we aim to reveal the potential use of bioactive ingredients such as peptides, polyphenols, polysaccharides in the maintainence of human health, the regulation of functional status, and the prevention of diseases. In this reprint, experts in the field share their new insights, research results, and future perspectives regarding the extraction, screening, evaluation, and application of targeted bioactive substances. We are on a journey to explore and exploit the positive effects of these substances on human health, to find a balance between eating well and eating healthy, and to promote the development and use of healthy foods.
