Summary:The research described in the book proposes an analysis of the city of Tunja from the perspective of urban imaginaries and social dynamics related to the sensory perception of taste. Investigating flavors allowed for the development of a reading of the city related to the everyday life of its inhabitants, their social practices, and ways of recognizing and appropriating spaces. Thru the study of the imaginary of flavor, it was possible to characterize events, situations, and places, represented in the book by drawn maps, recipe books, and itineraries that describe the city's routines. This research led to recognizing the nature of the spaces, the uses and activities they imply, as well as the feelings, opinions, and sensations that a city like Tunja evokes, represents, and stages.
