Summary:In the current cosmopolitan societies the continuous contacts, metamorphosis and mergers that occur between different kitchens express the tension between the maintenance of cultural identity and change. Feeding has become a class sign, a way of distinguishing itself, a mechanism through which our personal identity is constructed. And all this occurs within the framework of a globalization process that tends to homogenize the products in a kind of “global supermarket” governed by hyperspecialization, deceptive advertising and the laws of the capitalist market, thus threatening, thus, the diversity of thefood ecosystems.In this habitus, resistance movements arise that claim, from an edenic vision of Neorurality, food particularisms that recognize the folk value of the culinary traditions of yesteryear. We are, therefore, before a complex panorama that is addressed throughout the pages of this text with the objective of unbringing the main relationships between food and culture from a biocultural approach that combines the knowledge of nutritional and biomedical scienceswith the contributions of anthropology.
