Highly energetic (110 to 120 cal/100 g), rich in minerals and vitamins, these foods meet the challenges of food security and nutrition. The forest regions of Africa, Latin America and Asia produce an average of 30 million tons per year (nearly 70% in Africa) and the average consumption is 50 to 200 kg/inhab/year. Most of the production is carried out in family farming systems, and most of it is sold locally or consumed by the farmers themselves, in the form of a wide variety of dishes, but few processed products are available on the markets. Entrepreneurs are investing in plantain production for export to the United States and Europe, and for flour production. The multiplicity of uses and the ability of plantain to adapt to various agroclimatic zones are assets of this sector. This book refers more particularly to research and production in sub-Saharan Africa. Clear, concise and well-illustrated, it presents the state of knowledge and innovations available on plantain cultivation, as well as the assets and constraints of this sector. Transferring technical and scientific advances and attracting the interest of entrepreneurs and industrialists, on the one hand, and farmers and professionals, on the other, are the challenges for the development of the plantain sector. This book is intended for all agents of the sector involved in plantain production and marketing activities, and is also intended for teachers and students. / Les bananes à cuire et plantain sont des productions cruciales des pays des zones tropicales humides.
