Sažetak:This book presents part of the results of the research project “Food Cultures in South America: Memory, Diversity, and Sovereignty,” developed with support from CNPq. The main objective of the initiative was to explore theoretical, political, and methodological dimensions related to food and nutritional sovereignty and security, as well as practices that seek to promote them through the articulation between academic knowledge and popular knowledge. The work offers a broad overview of food practices and knowledge present in the South American region, recorded through interviews with students from the Federal University of Latin American Integration (UNILA). The central core of the publication consists of a Glossary, elaborated from the accounts of these students, which brings together culinary preparations and typical ingredients illustrated, commented on, and contextualized in the light of multidisciplinary historical and social approaches to food in South America. Thus, the book also constitutes a journey through the geographical, environmental, and ethno-racial diversities of South America
